I was completely surprised about how much I learned from Jonathan Vine's Vegetarian Quick & Easy - Under 15 Minutes book. I appreciated that Vine did not right in a tone of you "Need" to become a vegetarian or else.
I chose to read this book just to view some alternative ways to cook a full healthy meal that would help introduce me to some new vegetables that I have yet to try. And that is exactly what I received from Vine's book, recipes that were not too many ingredients and easy to follow instructions.
You must try the Cheesecake Bites, Caprese Salad, Cheesy Dill Omelet and Avocado Scramble - I was able to create all of these recipes from Vine's book and to my surprise I actually did it correctly and it was delicious. There's a lot more I want to continue to try.
I am by no way a vegetarian, but good quality food and recipes are universal. Vine promotes good eating and you really do not have to have a fat/sugary filled meal to get full and have tasty ingredients.
